Apricot Thyme Campari

Apricot CampariCampari is one of my favorite aperitifs. It's luscious and bitter...and the color is gorgeous. It's great with some ice and sparkling water...or if you want to take it to the next level, you can add a splash of homemade apricot-thyme syrup (recipe below), shake, and strain into a martini glass...cheers!Apricot-Thyme Syrup:Add the following to a non-stick pot: 4 apricots (chopped), 1 cup filtered water, 6 sprigs of thyme, 1/4 cup of organic sugar. Bring to a boil, then reduce heat to low and simmer for 10 minutes. Let cool. Strain into a squeaky clean airtight container and store in the refrigerator.
