Chocolate + Roasted Pluot Oatmeal Cookie | Deco TarteletteRoasted pluots are delicious...tart and succulent, they make a great addition to an oatmeal + chocolate cookie.These cookies happen to be egg-free. I don't have anything against eggs...I love them, actually, and realized I was out of eggs while in the middle of making this particular batch. So I decided to be creative rather than dash to the store. I used a combination of ground flax seeds + warm water as an egg replacement which worked really well!I hope you enjoy these little treats as much as I do! Happy Baking!Chocolate + Roasted Pluot Oatmeal CookiesMakes about 10 cookies:Ingredients:1/4 cup raw butter or organic unsalted butter, melted and cooled3 tablespoons organic sugar (lavender sugar is also delicious in this recipe)3 tablespoons organic light brown sugar2 tablespoons honey1 tablespoon ground flax seeds + 1 1/2 tablespoons warm water1/3 cup + 1 tablespoon organic bread flour (you can also use all-purpose)1/4 teaspoon cocoa nib salt1/4 teaspoon freshly ground nutmeg1/4 teaspoon cinnamon1/8 teaspoon baking soda3/4 cup organic rolled oats1/2 cup roasted pluots, chopped (recipe below)1/4 cup bittersweet chocolate, choppedDirections:Preheat oven to 375 degrees. Melt the butter then transfer to a large bowl and allow to cool. Add sugar, brown sugar and honey. Whisk until smooth. In a separate small bowl, mix the ground flax seeds and warm water until well combined. Allow to sit for 1 minute...then add to butter mixture. Sift flour, salt, nutmeg, cinnamon, and baking soda into the butter mixture. Whisk until well combined. Fold in the oats, roasted pluots, and chocolate until the mixture just comes together. Roll dough into about 10 balls. Place on a baking sheet lined with parchment paper. Bake for about 10-12 minutes. Allow to cool for at least 10 minutes before taking a nibble...Roasted Pluots:Ingredients:2 pluots, cut in half with seed removed1 tablespoon raw butter1 tablespoon honeyDirections: Preheat oven to 350 degrees. Meanwhile, melt honey and butter over medium heat in a small saucepan, stirring occasionally. Once the mixture has melted and combined, remove from heat. Toss pluots in mixture then place on a parchment-lined baking sheet skin-side down. Roast for about 30 minutes. Allow to cool completely...about 15-20 minutes.
