Cucumber Mint Mojito | Deco TarteletteThis cocktail is one of my favorites...not only because it's so refreshing but also for sentimental reasons. My husband used to make this cocktail for me quite often when we first started dating many summers ago. It's a fun cocktail to make. I tend to not like super sweet cocktails so if you like your beverages on the sweet side, feel free to add a bit more simple syrup...For each cocktail:2 tablespoons organic mint leaves, muddled + a sprig for garnishing4 organic cucumber slices2 ounces light rum1 tablespoon simple syrup (recipe below)1 cup sparkling waterHandful of icePlace mint in a cocktail shaker. Using a muddler or the tip of a wooden spoon, muddle the mint. Add 2 cucumber slices, simple syrup, sparkling water, rum and ice. Stir. Pour into a tumbler of your choice. Garnish with a sprig of mint and a few cucumber slices. Cheers!Homemade Simple Syrup:Place 1 cup of organic sugar and 1/2 cup filtered water in a small saucepan over medium heat. Bring to a simmer. Once sugar dissolves, remove from heat and allow to cool. Store in an airtight container in the fridge for about one week.Recipe + Photo by Cassie Winslow
