Homemade Granola with Blueberry Lavender YogurtHomemade Granola with Blueberry Lavender Yogurt...such a wonderful way to start the day. Homemade granola is so easy to make and having it on hand is so lovely, especially when the weather starts to warm up a bit. It's so comforting and filled with so many goodies. You can really add whatever dried fruit and nut combo you'd like. I tend to switch it up every time I make it to experiment with different flavor combinations...it's a lot of fun. This time around, I used walnuts and dried cranberries which paired lovely with my Blueberry Lavender Yogurt (which you can whip up in 5 minutes). This simple dish is one of my favorites...

Homemade Granola

Ingredients:1/4 cup organic Grade B maple syrup1/4 cup good quality extra virgin olive oil3 cups organic rolled oats1 cup organic walnuts, chopped1 teaspoon salt1/2 cup dried organic fruit (I used cranberries)Directions:Place olive oil and maple syrup in a cast iron skillet over medium heat. Meanwhile, preheat the oven to 350 degrees. After about 1 minute, add oats, walnuts, and salt. Mix until evenly coated. Bake for about 30-40 minutes or until golden brown, stirring every 10 minutes. Allow to cool. Add dried fruit. Place in an airtight container and consume within one week. Enjoy with Blueberry Lavender Yogurt (recipe below).Homemade Granola with Blueberry Lavender Yogurt

Blueberry Lavender Yogurt

Ingredients:1/4 cup fresh organic blueberries1/2 teaspoon organic dried lavender, crushed2 tablespoons of organic cane sugar1 tablespoon filtered water1 cup organic greek yogurtDirections:Place blueberries, lavender, sugar, and water in a small saucepan over medium heat. Bring to a simmer and reduce heat to medium-low. Allow to simmer for five minutes, gently squishing the berries with a spoon about half way in. Once you have a little sauce going, remove from heat and allow to cool. Place yogurt in a medium sized bowl and gently fold in the blueberry lavender sauce. Voila! Blueberry Lavender Yogurt.
