Mango Salsa

Mango salsaI love having a fresh batch of homemade mango salsa in the fridge. I have experimented with different types of fruit salsas (watermelon, cantaloupe, even strawberry) but mango is my favorite. I add it to breakfast burritos or as an afternoon snack with fresh tortilla chips (see recipe below) among many other dishes. Mango Salsa:1 large ripe mango, peeled and diced2 medium-sized on the vine tomatoes, seeded and diced1 small clove of garlic½ tsp salt½ tsp fresh ground pepper1 jalapeño, seeded and diced (I typically use a half of a jalapeño at first and let it hang out in the salsa for about 20 minutes…I then add the additional half if it’s not spicy enough which is typically the case)A handful of cilantro, chopped1 ½ lemons, juicedToss all the ingredients together and if possible, let sit overnight. Feel free to substitute a different type of fruit if you prefer….Tortilla chips:Lightly spray a non-stick cookie sheet with olive oil cooking spray. Take two flour tortillas and cut them up in triangles, size per your preference, and place the tortilla triangles evenly on the cookie sheet. Sprinkle a little salt on top if desired. Bake at 350 degrees for 10 minutes then flip and bake for another 5 minutes until golden brown….serve immediately.Photo|Styling|Recipe by: Cassie Winslow
