Maple Roasted Strawberry Ice Cream
Homemade ice cream is such a treat. It seems like a daunting task yet once you get the base down, you can pretty much make any kind of ice cream you fancy...my maple roasted strawberry ice cream is one of my favorites so I had to share it with you...enjoy!Maple Roasted Strawberries:Ingredients:1 lb. organic strawberries, hulled2 tablespoons organic maple syrupDirections:Preheat oven to 350 degrees. Meanwhile, toss the strawberries in the maple syrup. Place on a parchment lined baking sheet. Roast for about 30 minutes. Allow to cool slightly. Either place in a food processor or use an immersion blender to slightly blend the strawberries. Store in the fridge until ready to use...Ice Cream Base:Ingredients:6 organic egg yolks1 teaspoon vanilla2/3 cup organic sugarA pinch of salt3 cups organic half + halfDirections:Place egg yolks, vanilla, salt, sugar, and 1 1/2 cups of half + half in a double boiler (or fashion one by placing a heat-proof bowl over a pot filled with about 2 inches of water) over low heat. Reduce the mixture until it coats the back of a spoon, about 10 minutes. Once thickened, strain through a fine mesh sieve into a bowl. Add remaining 1 1/2 cups of half + half. Place in the fridge to cool while you prepare your ice cream machine. Pour mixture into your ice cream machine as instructed. Slowly add the roasted strawberry mixture. Once the ice cream is ready (using my machine, it was ready in about 15 minutes), transfer to a bowl. Serve immediately or cover with plastic wrap, pressing down on the ice cream, and store in the freezer.
