Peacotum + Lemon Balm Shrub Cocktail | Deco TarteletteHave you tried a shrub cocktail? Tangy and effervescent, they are unusually delicious.I was recently introduced to peacotums which are a peach/plum/apricot hybrid and are absolutely divine...especially when paired with fresh lemon balm. Feel free to use your favorite stonefruit. Cheers!Makes 2 cocktailsIngredients:4 ripe organic peacotums (feel free to use your favorite stonefruit)1 tablespoon organic honey2 tablespoons organic apple cider vinegar5 organic lemon balm leaves1/4 cup filtered waterHandful of ice4 ounces your favorite spirit...I used ginDirections:Place ripe fruit in a bowl. Toss with honey. Cover and let sit at room temperature for at least 2 hours, preferably overnight. Strain into a large bowl using a fine mesh sieve and a rubber spatula. Add vinegar + lemon balm leaves. Stir. Add water until you reach a balance you enjoy. I used 1/4 cup water. Pour into 2 tumblers filled with ice. Add gin or your favorite spirit. Stir.
