It's so much fun to experiment with different flavor combinations...one ingredient can really bring another to life if the pairing is just right. These biscuits are ridiculously yummy, especially when served right out of the oven with a warm bowl of homemade Rainbow Carrot + Chorizo Chili...Pink Pearl Apple + Purple Basil + Smoked Cheddar BiscuitsMakes half dozenIngredients:1 cup-1 1/3 cups organic all-purpose flour2 teaspoons baking powder1/2 teaspoon rose salt2 tablespoons raw or organic butter1 tablespoon organic coconut oil1/2 cup organic cream1 organic egg, beaten (reserve a touch for egg wash)1/2 cup organic pink pearl apples or your favorite tart apple, thinly sliced1 tablespoon organic purple basil, chopped1/3 cup smoked cheddar, cut into 1 cm cubesDirections:Preheat the oven to 375 degrees.In a large mixing bowl, combine 1 cup flour, baking powder, and salt. Add the butter and coconut oil using your hands. Mix until well combined. In a separate bowl, combine the cream and the beaten egg (reserve about 1 tsp for egg wash). Add the egg + cream mixture to the dry ingredients. Mix until just combined. Fold in the apple slices, basil, and cheddar. Turn dough out onto a floured surface. If the dough is really wet, continue adding flour gently until workable (this will depend on how juicy the fruit is). Roll dough out to 1/3 inch thickness, then fold so the dough is about 2/3 inch thick. Using a 2 1/2 inch round cutter, form 6 biscuits. Brush with egg wash. Sprinkle with a pinch of rose salt. Bake on a lightly buttered baking sheet for about 20 minutes or until golden brown. Serve fresh out of the oven with a warm bowl of homemade chili.Recipe + Photography by Cassie Winslow
