Plum + Peach Tart

Plum and Peach TartThis tart is scrumptious and quite simple to make...For the crust...You will need:1 1/2 cups organic all-purpose flour1/2 teaspoon salt1/2 cup cold butter, diced1/4 cup cold waterBlend flour and salt in a food processor. Add butter and blend until the mixture looks like coarse meal. Slowly add the water while blending until the dough is evenly moist and begins to form into a ball. Place on floured surface and gently knead. Form the dough into a disk and wrap in plastic wrap. Place in the fridge for 20 minutes. Preheat oven to 400 degrees. Roll out the dough on a floured surface. Place in a buttered 9" round tart pan. Line with parchment paper and fill with a handful of pie weights. Prebake the crust at 400 degrees for about 10 minutes.For the filling...You will need:2 large yellow peaches, sliced1 donut peach, sliced1 plum, slicedShy of 1/4 cup organic brown sugar1/2 teaspoon of saltGently mix all ingredients. Once you have prebaked the crust, place fruit in tart...make a nice design if you wish. Bake at 350 degrees for 40 minutes. Let sit for at least 30 minutes before serving.
