Small Batch Stone Fruit Jam

small batch stone fruit jamI tend to get a little carried away at the farmers' market this time of year...I'm just so excited about all of the produce that I tend to buy too much. I try to come up with creative ways to use super ripe produce and small batch jam is a great way to utilize a mix of stone fruit.Small Batch Stone Fruit Jam:This is what I used but feel free to make adjustments with whatever fruit you happen to have around:You will need about 4-5 cups of stone fruit, chopped...1 apricot3 yellow nectarines2 white peaches1 yellow peachJuice of one lemon1/2 cup organic sugarPlace all ingredients in a bowl and let sit in the refrigerator for an hour. Then, place in a saucepan over medium heat and bring to a boil. Boil for 2 minutes, then reduce heat to low-medium so the mixture is simmering. Simmer for 30 minutes, then take an immersion blender (or place in a blender if you do not own an immersion blender) and blend the ingredients to the consistency you favor...I like jam on the chunky side. Store in the fridge in an airtight container.Photo/Recipe/Styling by Cassie Winslow
