Small Batch Stone Fruit Jam
I tend to get a little carried away at the farmers' market this time of year...I'm just so excited about all of the produce that I tend to buy too much. I try to come up with creative ways to use super ripe produce and small batch jam is a great way to utilize a mix of stone fruit.Small Batch Stone Fruit Jam:This is what I used but feel free to make adjustments with whatever fruit you happen to have around:You will need about 4-5 cups of stone fruit, chopped...1 apricot3 yellow nectarines2 white peaches1 yellow peachJuice of one lemon1/2 cup organic sugarPlace all ingredients in a bowl and let sit in the refrigerator for an hour. Then, place in a saucepan over medium heat and bring to a boil. Boil for 2 minutes, then reduce heat to low-medium so the mixture is simmering. Simmer for 30 minutes, then take an immersion blender (or place in a blender if you do not own an immersion blender) and blend the ingredients to the consistency you favor...I like jam on the chunky side.
