Strawberry Guava + Black Pepper Jam
Strawberry guavas are tart with a subtle sweetness and pair well with the bite of black pepper. This jam makes an amazing PB&J...You will need:1 pint strawberry guavas, rinsed and rinsed and rinsed1/8 cup organic sugar1 1/2 cups filtered water1 tablespoon organic honey2 teaspoons fresh ground pepperMake the jam:Place all ingredients in a non-stick pot over medium-high heat and bring to a boil. Let boil for 10 minutes. Turn heat down to medium-low and bring mixture to a simmer until it thickens. Put through a fine-mesh strainer (there will be loads of seeds). If the mixture has thinned, return to a simmer and reduce until thickened. Let cool. Place in airtight container and store in the fridge. Eat within a week.Photography/Recipe/Styling by Cassie Winslow
