Cherry~Pecan Jam

DSC_0065Cherry-Pecan Jam:Ingredients:1/2 cup dried pitted cherries1/2 cup roasted pecans1 cup filtered water1/2 cup organic sugar1/2 teaspoon salt1 Tablespoon vanilla extractDirections:Place pecans on a cookie sheet and bake at 350 degrees for 8 minutes. Set aside and allow to cool.Place water and sugar in a non-stick pot over medium heat. Let cook for five minutes or until sugar has melted completely. Add cherries, salt and vanilla. Remove from heat and let sit for 10 minutes. Place cherry mixture and pecans in a food processor...pulse a few times then mix for 10 seconds. Store in the fridge...keeps for just a few days if it even lasts that long...I love adding this jam to a grilled-cheese sandwich with arugula...Photography + Recipe + Styling by Cassie Winslow
